ONION - PROJECT # 4 - FREEZING SOUP VEGETABLES

I just saved 1/2 hour of my time for my next soup by freezing the precise amount of vegetables I need; the vacuum sealed package ready for freezing, contain: 2 cups chopped onion, 2 cups diced carrots, 2 cups chopped celery, 2 cups diced zucchini, 2 cups mixed peppers, 2 cups peas;
90% of the soup ingredients are here in this package; the rest I will use fresh, such as potatoes, tomatoes (if I want tomato soup) meat and rice or pasta. I love to make my job easier but most important thing for me by freezing, is that I save money!
This freezing procedure is my new project for any food that can be freeze.


ONION -PROJECT # 3 - CHOPPING, SLICING, FREEZING



After dicing and slicing the onion, vacuum packaging is necessary before freezing.
Home Vacuum Packaging System locks out air and moisture. Prevents freezer burn and seals in freshness.



ONION - PROJECT # 2 - BAKED STUFFED ONION


All you need is some onions...

...scooped...


...stuffed with mixture of ground meat (pork in this case), rice, chopped onion (from scooping) tomato paste, salt, pepper; I made to much of this stuffing and I use it all in the same dish; the more the better...

...bake it for almost one hour at 400 F; I added some mozzarella cheese 5 minutes before I remove it from the oven...


...and this is it! Soooo delicious; garlic bread IS A MUST with this dish !!!

ONION - BIG PROJECT - LOTS OF TEARS!

What do you do with 50 lb. of onion? I'm still thinking...! But something must be done a.s.a.p.
First I will need my gloves and probably two boxes of tissue...literally I will cry!

How soon? When there will be "No More Tears" haha...
(you know Ozzy Osbourne song "No More Tears" right? well, I'm sure he did not have to deal with onions when he wrote the song...hahaha)

HOMEMADE APRICOT JAM

SHRIMP VEGETABLE STEAMED ROLLS

INGREDIENTS:
1 cup chopped cooked shrimp,
1 cup shredded cabbage,
1 cup shredded zucchini,
1 cup shredded carrots,
1 cup sliced onion,
1 cup chopped celery,
1 cup thin sliced green bell pepper,
2 garlic cloves, minced,
salt, to taste,
pepper, dash,
ginger powder, dash,
few drops sesame oil,
few drops soy sauce,
3 tablespoons cooking oil,
rice paper wrappers;
DIRECTIONS:
Heat 3 tablespoons of cooking oil; add all vegetables and stir fry for 2, 3 minutes; add shrimp,salt,pepper,ginger,sesame oil and soy sauce; stir fry for 1,2 minutes longer; remove from heat and set aside. In a sauce pan bring to boil 1 cup of water. Reduce heat to low; dip one paper rice and remove it immediately on a flat surface; spoon shrimp and vegetable mixture on one side and begin rolling. The rice paper is soft enough to work with it, but nor ready to be eaten; you definitely need a steamer, or you can deep fry them.
Serve with dipping sauce of your choice.



DIPPING SAUCE INGREDIENTS:
1/2 cup soy sauce,
1/2 cup sweet chili sauce,
2 tablespoons Balsamic vinegar

APRICOT CREAM CAKE DESSERT


This Cheese Cake is the base of this Apricot dessert, bought from the Asian Super Market.
For these three cakes, I used 1.1/2 cup frozen cool whip and 1/2 cup apricot jam (homemade), gently combined and spoon over the cake slices; 1/2 cup apricot syrup pour over it, followed by one teaspoon each apricot jam and garnished with chocolate melts.

CHOCOLATE RUM CREAM CAKE


This is what the cake is made of, CHEESE CAKE, from the Asian Super Market.


The Chocolate Rum Cream is made of butter, powder sugar, coco powder, vanilla and rum extract. Quantities varies according to the cake size. I did not measure anything in this case. (like in many other cases...)
