PICO DE GALLO - SALSA -


Ingredients:

  • 4 plum tomatoes, chopped,
  • 1/2 cup finely chopped onion,
  • 1 fresh Chile pepper, mild or hot, seeded and finely chopped,
  • 1 1/2 teaspoons finely chopped fresh cilantro,
  • 1 teaspoon lime juice,
  • salt and pepper, to taste,

Preparation:

Combine ingredients in a glass or other non-reactive bowl and refrigerate for at least 30 minutes before serving.
Makes about 2 cups.

DUO SQUASH AND ASPARAGUS SALAD - SIDE DISH

DUO SQUASH AND ASPARAGUS SALAD - SIDE DISH
No, I'm not vegetarian and I'm not in any diet, but the meat for today's grill is still frozen and I just played with some veggies for the grill (boneless pork chops) side dish. This combination of the two yellow and green squash, baby crisp asparagus, garlic, spices and fresh cilantro, all saute in garlic olive oil, it's such a flavorful and delightful dish to serve with or with out any meat. Vegans welcome!

ROSEHIP TEA LEMONADE

INGREDIENTS:
1/2 cup fresh lemon juice,
1 sliced lemon,
1 sliced lime,
2 bags rosehip tea,
4 tablespoons sugar,
8 cups of cold water,
ice;
Mix, serve, stay cool!
Enjoy!
