ONION - PROJECT # 4 - FREEZING SOUP VEGETABLES

I just saved 1/2 hour of my time for my next soup by freezing the precise amount of vegetables I need; the vacuum sealed package ready for freezing, contain: 2 cups chopped onion, 2 cups diced carrots, 2 cups chopped celery, 2 cups diced zucchini, 2 cups mixed peppers, 2 cups peas;
90% of the soup ingredients are here in this package; the rest I will use fresh, such as potatoes, tomatoes (if I want tomato soup) meat and rice or pasta. I love to make my job easier but most important thing for me by freezing, is that I save money!
This freezing procedure is my new project for any food that can be freeze.


ONION -PROJECT # 3 - CHOPPING, SLICING, FREEZING



After dicing and slicing the onion, vacuum packaging is necessary before freezing.
Home Vacuum Packaging System locks out air and moisture. Prevents freezer burn and seals in freshness.



ONION - PROJECT # 2 - BAKED STUFFED ONION


All you need is some onions...

...scooped...


...stuffed with mixture of ground meat (pork in this case), rice, chopped onion (from scooping) tomato paste, salt, pepper; I made to much of this stuffing and I use it all in the same dish; the more the better...

...bake it for almost one hour at 400 F; I added some mozzarella cheese 5 minutes before I remove it from the oven...


...and this is it! Soooo delicious; garlic bread IS A MUST with this dish !!!

ONION - BIG PROJECT - LOTS OF TEARS!

What do you do with 50 lb. of onion? I'm still thinking...! But something must be done a.s.a.p.
First I will need my gloves and probably two boxes of tissue...literally I will cry!

(you know Ozzy Osbourne song "No More Tears" right? well, I'm sure he did not have to deal with onions when he wrote the song...hahaha)
