APRICOT CREAM CAKE DESSERT


This Cheese Cake is the base of this Apricot dessert, bought from the Asian Super Market.
For these three cakes, I used 1.1/2 cup frozen cool whip and 1/2 cup apricot jam (homemade), gently combined and spoon over the cake slices; 1/2 cup apricot syrup pour over it, followed by one teaspoon each apricot jam and garnished with chocolate melts.

APRICOT COMPOTE


INGREDIENTS:

20 apricot halves,
1/2 cup sugar,
1 teaspoon vanilla extract,
5 cups of water,
cinnamon (optional);

Put all of the ingredients (minus vanilla) into a saucepan. Bring to gentle boil, and simmer until the apricots become soft, about 10, 15 minutes. Let cool; add vanilla; serve warm or cold over ice.

CHOCOLATE PISTACHIOS MOUSSE CAKE WITH CARAMELIZED APRICOT

For the base of this cake you will need one box chocolate cake mix, 3 eggs, 1/3 cup veg. oil, 1.1/4 cup water.
For the pistachios mousse you will need 1 pk. pistachio pudding, 1.1/2 cups milk, 1.1/2 cups whipped topping, 2 teaspoons clear gelatin.
To caramelize apricots, you will need 1 cup sugar, 1 cup water, 1 teaspoon vanilla extract and 3 cups fresh apricots.

APRICOT CHEESE MUFFINS

INGREDIENTS:

1.3/4 cup flour,
1 pk. 8 oz.cream cheese, room temp.,
1 stick of butter, room temp.,
1 cup sugar,
2 eggs,
1/3 cup milk,
1 teaspoon lemon zest,
1 teaspoon vanilla extract,
1 teaspoon baking powder,
1/2 teaspoon baking soda,
1/3 teaspoon salt,
12 apricots, (cut in 8 pieces each)

DIRECTIONS:

Beat cream cheese, butter, sugar and lemon zest until fluffy; add eggs one at the time; add vanilla, baking powder, baking soda and salt; add milk; add flour all at once; mix until all ingredients are well incorporated. Preheat oven to 350 F. Prepare 24 baking paper muffin cups;
fill cups 3/4 with batter mixture; top with 4, 5 pieces apricot; bake for 20, 25 minutes, or until nice and golden brown. Do not try tooth pick procedure, due to the fruit moisture.
