Directions: Saute onion in olive oil and butter until golden brown; add the rest of the ingredients and 5 cups of water (+). Let the soup boil until rice is fully cooked.
INGREDIENTS: 2 squares 8/8 puff pastry. 1/2 cup cottage cheese, 1/2 cup feta cheese, 2 eggs, 1/3 cup sugar, 1 tablespoon vanilla extract, 1 teaspoon lemon peel, 1/4 cup powder sugar;
DIRECTIONS: In a mixing bowl combine cottage cheese, feta cheese, 1 egg, 1/3 cup sugar, vanilla and lemon peel until well blended. Cut each pastry square in 4; that will make 8 little squares. Stretch each square by 1 inch on all sides. Place cheese mixture in the center of pastry. Fold each corner to meet in the center covering the cheese. Brush with egg mixture (1 egg+1 tablespoon water). Bake at 375 F for 20 to 25 minutes (+ or -) or until nice and light golden brown. Dust with powder sugar. Enjoy!
