MEATLOAF PIE, GARLIC PARSLEY SEASONED MASHED POTATO AND HOMEMADE PICKLES

INGREDIENTS:

1.1/2 lb. ground lean pork meat,
2 cups chopped onion,
2 cups diced mixed bell peppers (red, orange, green)
1 cup diced celery,
1 cup diced yellow squash,
1 cup chopped asparagus,
4 eggs,
3/4 teaspoon salt,
1/2 teaspoon pepper,
1/2 cup chopped parsley,
3 tablespoons olive oil;
1.1/2 tablespoons corn starch;

DIRECTIONS:

Cook meat until lightly browned in 3 tablespoons oil; add all the other ingredients, minus eggs and corn starch.
Cook for about 4, 5 minutes stirring. Let cool for 8, 10 minutes; add eggs and corn starch; mix until well coated. Place the meat and vegetable mixture into a baking dish and bake for 30 to 45 minutes at 400 F. Serve warm .

  3. hahaha...Judith!!! sorry for not posting the recipes in time along with the pics; my time is very limited on the computer; everything must be done FAST...any way, hope you enjoy my meatloaf recipe (this is one of them; it's never the same)

  4. Katy dearest, I've been making meatloaf for more then 30 years (starting back in Europe where I'm from) and never following a recipe; I like to experiment all the time!
