CRAB CROQUETTES



INGREDIENTS:
1/4 chopped green onion,
1 tbsp. butter,
1/2 tsp. dry mustard,
1/4 tsp. garlic powder,
1/4 tsp. salt,
6 oz. shelled cooked crab,
2 large eggs,
3/4 cup bread crumbs,
oil for frying;
Saute onions in butter for 1 minute;transfer to a large bowl; add mustard, garlic powder,crab, eggs lightly beaten, and bread crumbs; stir until blended.
Form mixture into 1-1/2 in. balls; roll into bread crumbs and fry until golden brown. Serve hot with mustard, hot sauce or desired sauce.
