ZUCCHINI PANCAKES
INGREDIENTS:
2 medium zucchini, grated,
2 green onion, finely chopped,
1/4 cup fresh parsley, finely chopped,
1/2 teaspoon garlic powder,
2 eggs,
1/2 cup grated Parmesan cheese,
6-8 tablespoons flour,
salt and pepper to taste,
olive oil spray;
DIRECTIONS:
Grate the zucchini using the large holes of a cheese grater and place in a large bowl. Add flour, green onions, garlic, parsley, , eggs, cheese, salt and pepper.
Heat a large skillet over medium heat and spray oil to cover pan. Drop 1 tablespoon of the batter into the skillet to form each pancake. Cook about 2 minutes on each side until golden brown. Set aside and keep warm. Spray more oil in the skillet as needed, and continue with remaining batter.

BROKEN LASAGNA
I know that the Italians have a specific name for this kind of pasta but I can't remember right now. This recipe is so easy to make; all you have to do is:
Break lasagna noodles into bite-sized pieces and cook . When they’re al dente, toss together the lasagna noodles with your favorite sauce , topped with Parmesan cheese, then, dig in.

BREADED CHICKEN TENDERS WITH GARLIC TOMATO SAUCE
10 chicken tenders (or less),
2 eggs lightly beaten,
1 cup flour,
1 cup seasoned bread crumbs,
oil for deep frying;
INGREDIENTS FOR SAUCE:
3 (14 oz each) cans tomato and basil,
1 medium onion, diced,
5 cloves of garlic, minced,
1/4 cup olive oil,
salt, pepper, thyme, oregano, basil, parsley,
red crushed pepper
DIRECTIONS:
Place beaten eggs, bread crumbs and flour in three separate bowls. Dip the chicken in flour to coat; then dip in egg followed by bread crumbs; set aside.
Heat 2, 3 cups oil. Fry chicken on both sides for few minutes until golden brown.
To make the sauce, saute onion and garlic in 1/4 cup olive oil until nice and golden; stir in crushed tomatoes and basil, plus all the seasoning; cover and simmer for 15 - 20 minutes on very low heat. Pour sauce over chicken. Serve with garlic bread.
