Happy Cinco de Mayo! How is everybody celebrating? Probably eating and drinking!
Here is a nice dish that my family really likes it and I wanted to share it with you. I also want you to know that THIS IS NOT my original picture, but I posted just to give you an idea on how this dish looks like. So, here are the:
INGREDIENTS:
2 cups shredded cooked chicken,
1 package (1.25 oz.) Taco spices and seasonings,
3/4 cup water,
1 can refried beans (16 oz.),
6 large flour tortillas,
1.1/2 cups Monterrey Jack cheese,
1/4 cup chopped pimiento,
1/4 cup chopped green onion,
1/4 cup fresh chopped cilantro.
vegetable oil;
DIRECTIONS:
In a medium skillet,combine chicken, Taco spices and water. Bring to a boil; reduce heat and simmer uncovered for 15 minutes. Stir in refried beans. On 1/2 side of each tortilla, spread 1/3 cup of chicken bean mixture. Layer cheese,pimiento,green onions and cilantro on top of each tortilla. Fold each in half. In a large skillet, heat a small amount of oil and quickly fry folded tortilla on each side until slightly crisp. Repeat with each folded tortilla.
Cut each quesadilla in quarters and serve with salsa or (and) guacamole.

We do not celebrate Cinco de Mayo as we do not have an ethnic group in our little city to bring this to our attention and to make it important. I know of this date only through friends I've met from other places I've lived.
ReplyDeleteI have only eaten quesadillas in restaurants and really enjoy them. Seeing all the delicious ingredients and how it appears to be simple enough for a gringa to make, I will give this a try!
Hola gringa Katy! I'm not mexican, I don't celebrate Cinco de Mayo, but it's on the calendar...and we LOVE mexican food!
