MELTING MOMENTS - CREAM AND JAM COOKIES
1 cup unsalted butter, room temp.,
3/4 cup sugar,
1 teaspoon orange zest,
1 teaspoon vanilla extract,
2 egg yolks,
2 1/3 cups flour,
FILLING:
1/2 cup your favorite jam,
1/2 cup vanilla butter cream,
powder sugar for dusting;
ONION CHEESE TART
1 package pie crust for 2 (9 inch);
1 cup shredded mozzarella cheese,
2 medium sliced onions,
2 tablespoons olive oil,
1 egg,
2 tablespoons mixed seasonings (Italian, pepper, rosemary leaves)
DIRECTIONS:
Preheat oven to 375F. Saute the onion in two tablespoons of olive oil until golden. Stir in all seasonings. Remove from heat and set aside. On two aluminum foil lined baking sheets, unfold pie crusts. Fold crusts edges over 1 inch to form rim. Brush with one egg yolk beaten with two tablespoons water. Spoon 1/2 onion mixture on each prepared pie crust. Top with mozzarella.
Bake for 20 - 25 minutes or until crusts are golden brown.

MY MELTING MOMENTS COOKIES FOR MY 400TH POST
1 cup unsalted butter, room temp.,
3/4 cup sugar,
1 teaspoon orange zest,
1 teaspoon vanilla extract,
2 egg yolks,
2 1/3 cups flour,
powder sugar for dusting;
DIRECTIONS:
Preheat oven to 350 F. Using an electric mixer, cream the butter, sugar, vanilla and orange zest.Add the egg yolks and mix thoroughly. Add the flour and mix until the mixture comes together to make a smooth soft paste. Spoon into a pastry bag with a 1/3 - inch star tip.
Pipe enough rosettes to fill ungreased baking sheets, spacing well apart. Bake for 10-12 minutes or until the edges are golden. Cool on a wire rack. Dust with powder sugar and serve.
