PEPPERS GARLIC SALAD and HAWAIIAN VACATION MEMORIES

This salad is very easy to make. Just cut the peppers in small strips (after seeded and cored)
and deep fry for few minutes . Remove into a salad bowl and stir in some vinegar, salt ,pepper and minced garlic; toss and serve.

It's so windy and rainy outside; it's been like this the whole day. I'm dreaming of summer time; where we will go this year?! While I was preparing this colorful salad, my mind went back to my last Hawaiian vacation with my two sons. We had so much fun on the Island. CHOCOLATE RUM PETIT FOUR

There are so many variety of PETIT FOUR - little cakes- but sometimes (actually most of the time) I like to create my own version of everything. My PETIT FOURS are made of cookie crumbs, butter, cream cheese, powder sugar, vanilla, rum, walnuts, raisins, cranberries, coated in white chocolate and topped with chocolate sprinkles. The outside looks like Petit Fours, but the texture resembles more of Truffles. We all love it! Definitely another dessert for my TEA TIME PARTY. I did not measure anything, I just mix a little bit of everything. For a better clean cut, I refrigerated for several hours.

RED PEPPER SPREAD

Roasted pepper delicacy, it is usually prepared in the fall to be consumed during the winter (in some countries), as an appetizer, snack or even as a side dish for any meat. There are so many recipes to choose from, but I have developed my own that my family loves the most. The ingredients are red peppers, onions, garlic, tomatoes and some spices, all saute and simmer for less then an hour. I serve it on crackers or toast, tartines. I also like to add it to soups or stews for more flavor and color.

DELICIOUS CHICKEN TENDERS

INGREDIENTS:
10 chicken tenders,
2 eggs, beaten
2 teaspoons vegeta,
1 teaspoon garlic powder,
1/2 teaspoon pepper,
1.1/2 cups flour,
Frying Cooking Oil,

DIRECTIONS:
Season flour with vegeta , garlic powder and pepper set aside; toss chicken into the flour mixture; dip into the beaten eggs , then flour mixture again. Fry for few minutes on both sides or until golden brown. Remove chicken onto paper towel to drain excess oil.
