BACKYARD BURGERS



POPOVERS

First time making it and definitely not the last but it still needs some improvements;
basic is to plain.

INGREDIENTS FOR BASIC POPOVERS:

1/2 cup flour,
1/4 teaspoon salt,
2 eggs,
1/2 cup milk;


DIRECTIONS:

In a bowl combine flour and salt. Whisk together eggs and milk; stir into dry ingredients just until blended.Pour into 3 greased and floured 8 oz. custard dishes. Place on baking sheet and bake uncovered at 425 F for 20 minutes or until puffed and edges are golden brown. Do not open the oven door during baking.

RADISH SALAD

INGREDIENT:

1.1/2 lb. sliced radishes,
2 tablespoons olive oil,
2 tablespoons white vinegar,
2 tablespoons chopped fresh dill,
salt to taste;

Mix and serve!

MEAT PATTIES AND LOW CAL. PASTA SALAD

INGREDIENTS FOR MEAT PATTIES:

1.1/2 lb. ground pork meat,
1.1/2 cups chopped onion,
4 minced garlic cloves,
2 eggs,
1/2 cup chopped fresh parsley,
1/2 cup chopped fresh dill,
1/2 cup biscuit mix,
salt and pepper to taste,
oil for frying;

DIRECTIONS:

Combine all the ingredients minus oil; form flat patties and fry them in hot oil on both sides for 6 minutes until meat is well cooked. Remove on paper towel to drain excess oil.
Serve with pasta, mashed potato, vegetables, rice...


INGREDIENTS FOR LOW CAL. PASTA SALAD:

4 cups cooked pasta,
1/2 cup thin sliced onion,
1 cup mixed thin sliced orange and yellow bell peppers,
1/3 cup chopped fresh parsley,
1/3 cup chopped fresh dill,
1/4 cup olive oil,
2 tablespoons white vinegar,
salt and pepper to taste;

Mix all ingredients until well coated; serve as is or as a side dish to your favorite meat or fish.

OREO RASPBERRY CREAM DELIGHT

Super easy dessert!

INGREDIENTS:

1 package Oreo cookies, cream removed,
1 package cream cheese, softened,
1 package raspberry gelatin,
1/2 cup powder sugar,
1/2 cup boiling water;
2 cups cool whip,
fresh raspberries;

DIRECTIONS:

Dissolve gelatin in 1/2 cup water; beat cream cheese and sugar until smooth; add gelatin; mix until well blended; refrigerate until set; sandwich together 3 cookies; top with cool whip and garnish with fresh raspberries.

ROASTED PORK AND CARAMELIZED ONION WITH SWEET CHILI SAUCE IN PITA POCKET

INGREDIENTS:

1 lb. pork meat cut in small pieces,
1 sliced large onion,
1 tablespoon olive oil,
1 teaspoon Montreal seasoning,
2,3 tablespoons soy sauce,
2,3 tablespoons sweet chili sauce (plus extra for dipping)
2,3 pita bread cut in half;

DIRECTIONS:

Cook meat in one tablespoon olive oil until brown; add seasoning, 2 tablespoons soy sauce, 2 tablespoons chili sauce; cook for 1 minute stirring; add onion and keep cooking and constantly stirring until onion turns lightly brown and glossy; add one more tablespoon of soy sauce and chili sauce; no salt or pepper needed when you use Montreal seasoning.

Stuff each half of pita bread and serve right away.

OREO MARSHMALLOW CREAM CAKE ROULADE

This cake is made of Oreo cookies and butter filled with cream cheese, sugar, butter and marshmallows. It was an experiment and like many other experiments of mine turn out to be a scrumptious dessert.

INGREDIENTS:

4 ,5 cups Oreo cookie crumbs,
1.1/2 cups butter, softened,
1 pk cream cheese softened,
1 cup powder sugar,
2 cups miniature marshmallows,
1 teaspoon vanilla extract,

DIRECTIONS:

Mix cookie crumbs with butter to a nice and smooth texture. Spread on parchment paper almost 1 inch thick, a rectangular shape. In a clean mixing bowl, beat cream cheese and sugar until smooth; add vanilla and sugar; fold in marshmallows. Spread the mixture over the cookie sheet; roll; refrigerate until firm , about 2 hours. Dust with powder sugar or be creative... slice and serve!

"MELTING MOMENTS " - COOKIES -

INGREDIENTS:

1 cup butter softened,
1.1/2 cups powder sugar,
2 eggs,
1.1/2 cups flour,
2 cups corn starch,
2 teaspoons vanilla sugar,
1.1/2 teaspoons baking powder;

DIRECTIONS:

Cream butter and sugar; add eggs one at the time; add baking powder and vanilla sugar;
add flour 1/2 cup at the time; add corn starch 1/2 cup at the time. To mix use your hand!
Dough should not be sticky! Form 1.1/2 inch balls; place on ungreased baking sheets and bake for 20 minutes until the bottom of the cookies are lightly golden brown.


SPAGHETTI WITH HOMEMADE TOMATO SAUCE



HOT AND SOUR SOUP

INGREDIENTS:

1/2 pound boneless pork, cut into julienne strips
1/2 cup carrots, cut into thin 2 inch long strips
1/2 pack Firm Tofu, cut into 1/2 inch cubes
1/2 cup chopped onion (green onion optional)
1/2 cup black dry mushrooms (Black Fungus)
1/2 cup bamboo shoots
2 tbsp. corn starch
2 tbsp. soy sauce
2 tbsp. white vinegar
1 tsp. sesame oil
1 tsp. white pepper
1 tsp. minced garlic
1 egg
salt to taste

DIRECTIONS:

Cook pork in 4-5 cups of chicken broth (water is fine) for 10-15 minutes.
Add all the ingredients( except egg and corn starch) cook for 4-5 minutes.
Combine corn starch and water until smooth; add to soup.
Stir constantly , bring to a boil over medium heat, for one minute.
Beat egg with fork; add to soup stirring.
Add more salt, soy sauce, vinegar, to taste.
Garnish with green onion (optional)
